A lunch so nice I ate it twice

Lunch number 1346 and 1347 was a real winner. I liked this little dish so much I made it twice in a row. And as an added bonus I got to use up some leftover quinoa that was kicking around the fridge. Woot!
Spicy shrimp, quinoa, avocado bowl for one
You will need:
- five shrimp (peeled and cooked)
- 1 TB of olive oil
- a couple teaspoons of lime juice
- a dash of chili powder
- a dash of cumin
- red pepper flakes to taste
- 1/2 avocado
- 1/2 cup leftover quinoa (cooked)
- cilantro (optional)
It comes together very quickly!
1) Combine the olive oil, lime juice, chili powder, cumin and pepper flakes in a small bowl. Toss with shrimp. Set aside.
2) I prefer quinoa to be room temperature or a little warm. Microwave it, if you like, then top with diced avocado.
3) Top the quinoa and avocado with the shrimp mixture, including the spicy oil. Garnish with cilantro if using.
