Mashed potato pancakes (because leftovers make me crazy)

What does a gal do with three cups worth of mashed potatoes that are biding their time in the fridge? Fry ’em and serve ’em for lunch, of course.

I always try to make extra mashed potatoes and then I use them in potato biscuits. Basically a variation on old fashioned baking powder biscuits.
