Fishbowl’s Fave recipes for fall: Recipe #4 – Carrot slaw

Root vegetables are plentiful this time of year.
The other day we found ourselves with a few too many carrots on hand, so I grated ’em up and made this slaw out of them.
Forgive the imprecise measurements:
a few carrots
a spoonful (or two) of rice vinegar
a spoonful (or two) of sugar
a handful of peanuts (pound them a few times with a hammer to crush them)
some sliced green onion
Grate carrots. Mix vinegar and sugar. Pour over carrots. Mix. Sprinkle with peanuts and green onion. Serve.
