looking for a great recipe for healthy lunchbox bars

My criteria:

– nut-free (our school is totally nut-free, and that includes tree nuts)
– healthy … low in sugar, good fibre etc
– freezable

Help! If anyone has a recipe my kids will love, please let me know.

can’t help you, looking forward to any suggestions you get. but sunflower butter/seeds are okay right? our school is the same but i haven’t educated myself on what is okay or not yet (i’ve only had to worry about a small snack for Mouse so far…no lunches).

I think sunflower seeds are ok. By the same token I guess coconut would be too.

This is about the clock. i have a very cool retro looking clock-non digital alarm clock. It actually wakes you up by flashing light and in a few minutes if you don’t get up, it ‘alarms.’ It’s either from LLBEAN or LANDS END

just a quick comment on the coconut…some packages say “manufactured in the same facilities that use peanuts”. My daughter’s school is also nut-free, so I too am looking forward to any recipes you receive!

I made a yummy recipe with my dehydratorm adjusted from the recipe book that came with it. Its basically honey, sunbutter (sunflower seed butter), sunflower seeds, flax seeds, vanilla, oatmeal soaked in hot water, various dried fruits, or chocolate chips, a little oil, and whatever else you like in your granola. You spread it on the fruit roll sheet in the dehydrator and let it go til it gets to a texture you like. We like ours crispy so it takes a while. If you need the measurements, just fire me an e-mail and I can look them up! It’s so yummy, and just typing it out makes me want to go get some started so I can eat it tomorrow!

Gretchen, sounds yummy, but I’d need to have a dehydratorm! :)

Otherwise, I haven’t found much so far. This might do the trick: Raspberry Oat Bars

And this one is a bit low in fibre, but might be worth a try anyway: Apricot Coconut Bars

I just want something my Son will eat in his lunch. He doesn’t eat anything with nuts so that is not a problem but just getting him to eat is. Any Idea’s anyone? Please…Picky eater here.

Sharon, does he like cereal? That did the trick for my picky eater. I put her favourite in a resealable container and milk in a cold thermos and then she could add the two together at lunch.

That’s all I’ve got right now, save for pasta salad, homemade “lunchables” or soups etc… My kids don’t usually mind sandwiches and traditional lunch fair.

A must try! Loaded Granola Bars at http://www.homebasics.ca You can play with the maount of sugar/honey you use, and change up the dried fruits and such.

I lucked out and found a brand new, unused dehydrator at Goodwill for about $8. I did a little happy dance right there in the aisles :) But for the bars if you still want to try them, we made cookie shaped patties, and you could plop them on a parchment lined cookie sheet and just bake them up in the oven at a low temperature. It would turn out very similarly, just a bit chewier. The recipe you just posted sounds tasty, and I think we are going to try it this week!
