Chickpea salad

Good golly. It’s not even dinner time and I have already eaten an unholy amount of this chickpea salad … even though I forgot to add the ginger and used green onion instead of the red (I ran out!) and didn’t add cilantro (ditto!).

And think of the fibre! Woot!

 

eta: AND I just realized I read the recipe wrong! I didn’t cook the onion/garlic, and just threw everything together in a big bowl. Haha.

I have a little chickpea who will love this salad.

Looks really easy, and most of those ingredients we have on hand all the time (I buy the cubed cilantro from the frozen section for those moments when I don’t have fresh in the fridge…I know they are totally not enviro friendly but I love cilantro what can I say?).
