Know More Do More Monday …

…  has been taking a break this past week. But we haven’t been couch potatoes. No siree. But more on that later today.

The KMDM activity for this coming week is:

Cook extra chicken, turkey or roast beef for dinner and use leftovers as sandwich fillings for lunch. Deli meats are highly processed and usually high in sodium.

Deli meats – and bacon – are a failing of ours. During the school year they get ham and/or salami in their lunches a few times a week.

I can cook an extra chicken, sure, but the kids have never agreed to eat it in a sandwich. I will try again and see. *sigh*

This post is part of the Know More Do More initiative which was spearheaded by the Champlain Cardiovascular Disease Prevention Network. KMDM is about empowering parents and inspiring them to take charge of their children’s health by taking easy steps to increase activity levels and improve eating habits. I’m one of two champion families who has been asked to take this challenge. Since they already eat ham, would it not make more sense to cook ham for them and slice it? I’ve got a great way of doing a salted ham that I bet they cannot resist. I’m due for making it again as well so I’ll do up a video really quickly. And maybe a meat slicer is in order? You can get cheap but functional ones for under 100 bucks. My wife picked up this bad boy at a yard sale for 4 bucks! Great German-made hand-crank slicer that still has decades of use in it. As the commercials used to say “it will slice a tomato so thin your in-laws will never come back” :-)

Why necessarily for sandwiches? Why not cold chicken with some veggies and crackers?

or prep some extra veggies for a soup or rissotto !I’ve been at the artichokes & hearts of palm this do more monday .
