For a more detailed but easy to digest (pardon the pun) information of this failure of the North American diet check out Michael Pollan’s In Defense of Food. Just reading it now but have read his other books previously. Essentially by tinkering with fertilizers and GMOs we are getting less nutrition in the shape of more calories. As he puts it, if it has more than five ingredients and you cannot pronounce those ingredients it isn’t food, it is a food product.
