BROCCOLI SOUP

Forgive the all-caps headline there, but I am pretty excited about this one.

I was at Farm Boy when I spotted a display of broccoli and I knew, right there, that I HAD TO HAVE some broccoli soup. I also knew that it couldn’t be that “lite” kind of broccoli soup. It had to be thick, and creamy, with lots of cheese on top.

I did a quickie search for a recipe and found this one. I made it for dinner. It was dead easy, and you know what the best thing is? I had it again for lunch the next day and it was even better:

This time, I topped it with a slice Farm Boy Italian bread (cubed and fried in butter), some old Balderson’s cheddar, and a few green onions. It was exactly what I needed.

Did you follow the review’s suggestion to include the broccoli stems and mash instead of puree?

I did use the stems. And I used an immersion blender on the whole shebang. (This took awhile though. Next time I’ll use a food processor.)
