Regarding the ‘eat beans instead of beef’, I think a lot of people shy away from beans because they simply don’t know how to cook them, make them palatable.

I have gone so far as to include beans in my beef recipes, sometimes mushed up, just to stretch the meat and to increase nutrients, but not everyone is savvy in the kitchen, or willing to experiment. It’s been tough for me too bec 3 out of 4 people in this family aren’t crazy to eat them. But they will eat hummus, or chickpeas, or grin and bear it if I mush it up in soup and they don’t ‘see’ it as so obvious…

I’m glad you enjoy these posts! There used to be a “Like” button on each post but it got eliminated awhile back when I was having technical issues with the blog and trying to figure out what was causing it! I decided not to install it again because I’d much rather receive a comment. :)

re: beans. Chickpeas and hummus are big over here but my family doesn’t generally like beans. I do need to find some new recipes and try again!
