My favourite new salad – and yes, it’s KALE.

It is seriously good, and so easy to pull together. So fresh and flavourful too!

Would it help you to know that my youngest ate TWO servings of this for lunch yesterday? I AM NOT KIDDING.

All you need is:

  • a handful of kale (no stems)
  • dressing: a couple tablespoons of olive oil, 1 tablespoon lemon juice, a squirt of dijon, a squirt of honey, S & P
  • one nectarine, chopped
  • 1/2 avocado, chopped
  • a couple tablespoons of goat cheese
  • a few walnuts

Make the dressing in a large bowl and toss the kale thoroughly to coat. Let it sit for a few minutes while you prep the other ingredients. (Some people suggest to “massage” the kale – apparently it helps reduce the bitterness. Try it!)

Once you’re ready, transfer the kale to a smaller bowl and top with all the other stuff. That’s it!

I’m going to try this one for sure.
My first two kale attempts were failures. Nobody would eat the kale chips and when I made sautéed kale with lemon it tasted like Lemon Pledge. Seriously nasty. I used a bit of coconut oil for the sautéing so maybe that ruined it.
This recipe looks yummy and fail-proof. (I’ll let you know…)
