Although the temperatures haven’t indicated that Spring is on its way, the sun sure has. The days are longer and brighter and all of this sunshine is making me happy. And also, a little squirrely. Suddenly I have the urge to reorganize the freezer, air out the pillows, and generally give everything A Good Deep Cleaning.

Now that the sun is streaming through the windows again, I tell ya, it sure is nice to get rid of that winter grime.
I’ve been on a bit of a kiwi binge lately. We’ve already gone through a few bags of kiwis here at Casa Fishbowl and I am sure there are more to come. Kiwi fruit is small, sweet, and is high in vitamin C. It seems like everyone in my family has a different way of eating kiwis! The process either involves peeling off the skin of the kiwi with a paring knife and eating it in slices or cutting the kiwi in half down the middle and scooping out the contents.
Unfortunately, you are apt to lose precious kiwi meat with the peeling method unless you have a very sharp knife and are very good at wielding it around a slippery little fruit. As for scooping it out with a spoon, that’s all well and good until you get a little excited and push the spoon through the skin, which makes it very hard to eat the remaining kiwi. This is obviously what had happened when I saw one of my kids eating kiwi over the kitchen sink. And THAT was when I had my a-ha moment. Why not slice up the kiwi in quarters, the same way we do oranges sometimes?

After MUCH experimentation I’ve discovered that this is the best way to eat a kiwi. I don’t know why I hadn’t thought of it before. This way, I can maximize the amount of kiwi being eaten and there’s no spoon slippage or potentially nasty paring knife incidents.
Mind you, this is not a particularly GLAM way of eating a kiwi (I’m still eating it over a plate or the sink) but this is something I can live with. :)
By the way, did you know that the skin of a kiwi is edible? Apparently there’s good fibre in kiwi fruit skin.
I haven’t written up a “will they eat it” post for awhile now. I was poking around my recipe archive and remembered how fun it was so I thought I’d revisit when I could.
I found a new recipe to add to my repertoire. It’s fast and flavourful and made a pretty good lunch the next day too. (Basically, the perfect weeknight dinner.) Spoiler alert: everyone ate it and I declare it to be a winner despite the fact that ONE individual picked out the leeks. Another person may have even yelled when I attempted to garnish with parsley. Sigh.

This Leeky Linguine with Shrimp recipe is via Rachael Ray. It’s a welcome change from the usual pasta recipes we have on rotation. Sadly, I did not have nearly enough leek as this recipe called for (only one lonely specimen in the veggie drawer) but it was still very good. I will definitely use the full amount next time even though I’ll be forced to put up with a complaint about the “green things.” :)
