Beet lovin’ me

I like beets, but I don’t eat them very often.

We got a bunch in our recent CSA delivery from Mike’s Garden Harvest (and I suspect there might be more coming), so I did what any gal would do… I wrapped them up in foil and cooked them on the BBQ.

After they cooled I peeled them to make this roasted beet salad. BUT I also had a NOW OR NEVER nectarine in the fruit drawer that had to be eaten, so I added it to the mix. I tell ya, it was heavenly.

It reminded me of how good food can be when you use simple, excellent, ingredients. It tasted amazing, and it made me happy. (YES, really.) Can a salad be good for the soul? I say yes.

Camp Weekend

We are back from a working weekend in the wilderness of Temagami. It was a gig which encompassed two of the things I love to do: visiting beautiful places and talking to interesting people. Have you ever been up there, north of North Bay? It’s good for soul.
