Confetti squares… a holiday snack or any day snack for anyone with a sweet tooth?

Someone mentioned confetti squares being their favourite childhood treat so of course I had to look it up immediately.

Much like this Christmas crack we make every year, it’s the kind of thing that you don’t bake, it’s more of an assemblage, but hey, that’s a good thing, especially for people like me who don’t have the time or patience for intricately decorated sugar cookies and gingerbread houses.

Sooo… confetti squares, also referred to as confetti bars, are as easy as it gets. A word of warning: these are sweet, like, really sweet.

If you can melt butter in a pot and dump in some sugar, a bag of butterscotch chips, and a bag of mini-marshmallows, you can make these. This is a low effort, no-bake creation!

For the record, I used this recipe.

It made a LOT – a large 9 x 13 tray – which is welcome during a time when it tends to get busy. I brought half to my office holiday party and we ate the other half here at Casa Fishbowl, and even brought a few to share with family when we went for a visit. There were happy faces all around, which is kind of the point when making treats at Christmas (regardless whether you slave away in the kitchen or just make something quick like this). The version I make has you add coconut, and is both butterschotch chips and chocolate chips. It is the version my Mother-in-law always made.

I annually make the recipe using either Soya butter or Sunbutter because of allergies now

They are addictive

I usually add rice crispies to stretch the recipe and cut down on the sweetness a bit, plus then they don’t melt all over your hands as much. Not that I mind licking my fingers off. ;)

I tend to make spiced nuts, like the ones below, but have added different spices (just plain cinnamon, Chinese 5-spice, Mexican chocolate which included cocoa and cinnamon and cayenne, etc), and I haven’t tried coating them in chocolate before. They make fantastic gifts and without the chocolate are delicious on salads.

This year my husband made his mom’s shortbread, recipe is pretty much the one below. It’s not overly sweet, but easy to make and so good.
