The Fishbowl summertime eating series – Recipe #2 – Poke Coffee

Posted by andrea tomkins in: Recipes and Food

I like my coffee. Thanks to my in-laws we have an espresso maker that makes an excellent brew. I am very particular about my coffee. I like it just so. I have a highly-developed production technique: four oz of water, two scoops of espresso beans, this much frothed milk and one packet of Splenda added to it and nuked in the microwave.

Delish.

I also like to have a coffee (scratch that, I NEED a coffee) after lunch. I make it the same way I do in the morning. But who wants to drink hot coffee when it’s just as hot outside?

This discovery was totally accidental but I’m totally addicted to what I’ve termed … Poke Coffee.

I made my usual coffee, added sugar (but not the milk) and let it cool to room temperature. I poured the whole thing into a beer stein and stuck it in the freezer. And then I forgot about it for 3 or 4 hours. What tipped me off was the distinct feeling of withdrawal symptoms: headache and general malaise. If you’re a coffee drinker you must know what I’m talking about.

My coffee was practically frozen, but not quite. There was a layer of ice on top, and around the sides too, but the stuff in the middle was still liquid. I poked a small hole in the top layer of ice and pored cold milk into it. Imagine a refreshing iced coffee without huge ice cubes crashing into your dentalwork! It is yummy.

I have truly revolutionized my own summertime coffee habit!

Oh my gosh! That’s the best idea ever!
I’m going to try that right now.

Hopefully I’ll have a great Poke Coffee for when I get back from yoga.

My old university roomate always put the leftover coffe into the fridge and would make various cold coffee drinks with it later on. I can’t stomach cold coffee (other than the new mother type ‘cold’ coffee I drank for so long). Me, I need my two cups of hot joe in the morning and sometimes one around lunch time. yum.
