Keeping cool… with watermelon!

Nothing says SUMMER like a cold slice of watermelon, doesn’t it? Even Piper enjoys a lick of watermelon now and then:

As much as we love watermelon, for some reason we find it challenging to eat a whole one. That’s why I wanted to jot down some ideas for the next time I have extras kicking around. Here are a few that I’ve bookmarked!

My favourite hot weather salad is this one using a hoisin-lime dressing. I add quite a bit of sambal oelek to the dressing to give it a kick.

You have problems finishing a watermelon? No way!!!!

Here’s a trick. Cut it all up and remove from the rind (takes up much less room).

Make nice little 2-bite pieces and put them in a clear container in the fridge. It’ll all be gone in no time.

Seems hard to believe, doesn’t it? But some of those watermelons are pretty big!
