New experiments with spicy soup recipes

Can I make an observation? It’s easier to eat healthy when you’re eating food that makes your tastebuds sing. And unless you are a rabbit, you tastebuds probably won’t welcome a steady diet of celery and carrot sticks. For me, HEALTHY has got to be SPICY. That’s why I’m always on the lookout for something that’ll give me my fix.

This is the second soup recipe I’ve made from my MIL’s WW cookbook. The first one, an Indian Carrot Soup, was woefully bland. (Isn’t anything with “Indian” in the title supposed to have a good kick to it?)

When I looked at this recipe I thought it might be bland too. So I notched up the heat and made it vegan/vegetarian. You can make it as organic as you want too. It’s high fibre and low cal, perfect for a lunchtime soup. I made it today and it turned out really well. It was so good I didn’t even take a photo of it. And I licked the bowl.

Here is my revised recipe:

Sengalese Peanut Soup

One 15 oz. can of chickpeas, rinsed and drained
3 cups vegetable broth
3 tablespoons natural creamy peanut butter
1 teaspoon peanut oil*
2 onions, chopped
2-3″ knob of ginger root, peeled and minced fine
1 tablespoon curry powder
1 teaspoon ground cumin
1 14 oz. can of diced tomatoes
1/4 teaspoon cayenne pepper (or to taste)
dash of sea salt
chopped cilantro (optional garnish)

* do measure your oil! Eyeballing often adds unnecessary calories.

1. In a blender or food processor, combine the chickpeas, 1/2 cup of the broth, and the peanut butter; puree.

2. Heat the oil in a large saucepan. Sauté the onions and ginger root until the onions are soft; 7-8 minutes. Stir in the curry powder and the cumin; sauté for another minute.

3. Add the remaining 2 1/2 cups of broth, the tomatoes, the chickpea mixture; stir, simmer about 10 minutes until everything is blended and heated through. Season with cayenne. Serve sprinkled with cilantro.

It makes about 6 servings and each is worth 4 WW points. I can’t wait to try this tomorrow after the flavour has settled overnight.

Sounds super yummy! Here’s another great (if I do say o myself) soup recipe to try. You can adjust the heat with more/less/different curry powder/paste.

Mmmm, sounds yummy. This is one of my all-time favourite soup recipes. Very easy and it freezes well. You can use any type of lentils that you have on hand:

Sounds yummy! I also like soups with a little kick so I will have to try this one. If you like spicy soups this one is good: http://www.epicurious.com/recipes/food/views/Portuguese-Kale-and-Potato-Soup-356029. It has chorizo sausages in it though but you could probably substitute a spicy veggie sausage instead.

Loved this recipe! I made a few modifications – I puréed the soup with an immersion blender to give it a more creamy texture. Omitted the cayenne and we spiced the soup ourselves with Sriracha. To make it a meal, we added leftover chopped chicken. YUM! This was a real treat and we will definitely make it again.
