Fast food salad

Roasted beet and goat cheese salad - after

One of my favourite meals is something I can make fresh, fast, delicious, healthy, and beautiful.

This recipe is for those things. (I shouldn’t even call this a recipe. Because it’s really just about assembling!)

 You will need:

  • a handful of baby spinach
  • a few strawberries; washed, hulled and sliced
  • some crumbled blue cheese
  • walnuts (optional)

Throw everything on a plate and drizzle with a bit of …

  • dressing: 50/50 good quality olive oil and balsamic vinegar
  • sprinkle with optional walnuts

I ate is almost as fast as I made it, so alas, I have no photo of this one.

I do this type of salad regularly to take to work. I usually leave a can of tuna in my desk to put on top when I need some extra protein.

I made a salad so good I was telling everyone yesterday. Spinach and boston lettuce, avocado, green onion, and an orange cut up. For dressing lemon juice & Olive oil and a bit of the juice from the orange. It was delicious.

I love this salad – I make it often, except I always use goat’s cheese instead of blue cheese. It is fantastic!!

I’m not a blue cheese fan, but swap out the blue cheese for feta and add a handful of blueberries and that’s our fave summer salad. Yum! Also yummy if you throw in sunflower seeds instead of walnuts.

I do this exact same salad (almost) – goat cheese instead of blue, and I often add raisins.

Love love baby spinach!

This blue cheese is strangely mild. Stilton is good too, but I LOVE goat cheese. Dried cranberries are good too.

I make a salad similar to yours without the blue cheese and I add a raspberry vinaigrette which is really delicious.
