I needed a quickie Pad Thai recipe to satisfy a lingering craving and prevent a large restaurant expenditure. This one fit the bill, although next time I’d use fewer noodles or make more sauce, and maybe toss a couple shrimp in there and a small handful of baby peas. But here’s a surprise, both kids ate it. Mind you, without the greenery on top.
